First of all, it should be cooked in flavorful olive oil, and then it's pretty much completely flavorful with the salt and pepper. Buttered toast under a soft yolk will combine for a nice flavor.

I like a few drops of Cholula, or Tapatio are my favorite hot sauces for eggs. When scrambling an egg, I love a bit of green onion heated in the oil/butter with the egg.

When doing some quick scrambled egg in some leftover rice like the quick morning after leftover rice = fried rice idea, maybe with some carrot, slaw blend in the pan with some ham or w/o, then I like some Super chili crisp. It has a nice garlic crunch and mild heat and helps the rice brown. Makoto dressing can add the soy needed with lots of great fresh ginger.

If you are softly cooking the egg or poaching it, don't forget about blender hollandaise, which is so delicious and easy.

I like to sweat some finely diced shallots (onions are fine too), together with some bacon cubes (or dice bacon). Add the egg on top and fry. It's already great like this, but some days I may add a slice of cheese on top, then some water around the egg in the pan and put on the lid. The steam helps melt the cheese.
Then when it's done, add some hot sauce on top of the cheese and eat like that, on bread, or in a sandwich.

If you're gonna toss a fried egg on top of rice or noodles, you need a very runny yolk, OR a very crispy fried egg. There is no inbetween.

Grate some cheese of your choice over the egg shortly before pulling it from the pan. I mix it up between parmesan, pepper jack, and gouda depending on what's on sale/available. You don't need much and can go lighter on salt, then. I almost always add a pinch of paprika, too, but that's probably more cosmetic than anything.

If no cheese, I like basic salt+pepper or the meme everything but bagel seasoning. Another good find is some sort of "umami" seasoning blend. Trader Joe's has a mushroom-based umami blend that's actually really good and has a little kick from crushed red pepper.

Salsa is really good on eggs, make a batch and try it. As for fats I don't skim the fat from chili whenever I make it, when it's in the fridge I'll scoop it all off the top and put it in a container and use it like butter, I've fried eggs in it before and it turns out great.

What usually works for me is to take a few pounds of ground beef and toss it in a pan until it is simmering. I gingerly remove the beef leaving the greasy liquid and proceed to simmer up some eggs in the beefy juice. I do not flip the egg, I spoon liquid on top in the manner of a sunny side up. Happy to report that I made fried eggs and bacon this morning but I was so hungover and technically "working from home" that I did not capture any photos of the monstrosity.

I will say this in all fairness and gratitude, these spice blends tend to really be worth it at least once you find the one/s you like. It was really really good on the eggs and does contain salt but very little so there's room to add if you need to. I can't wait to use that spice blend on my chicken patties for meal prep (the pepper steak blend I use for beef patties).

It says one of the main ingredients in the Egg blend is paprika, and I was so happy to see it wasn't the dusty powdered shit, it was chunks of dried minced paprika and with the chive and pepper it was such a quality flavour.

9/10 will use with great prejudice
