I really enjoy melty cheese. All it is is sodium citrate + cheese + other stuff like milk, butter, heavy cream, etc.

I use high quality cheddar and make nacho cheese or really amazing cheese for burgers. The melted texture is excellent on burgers, and honestly, you're kind of a bandwagoning tastelet masquerading as a food snob if you can't see that. Sorry!
