Being scientifically accurate doesn't automatically make it good advice. Yes adding baking soda to a tomato dish will raise its ph and make it less acidic, but chances are if you feel the need to do that you've already fucked the dish beyond recovery. Also, some of the tartness is tempered when you have pork fat in your sauce.

When I make a big tray of lasagna, I am using a can of crushed in puree, plus a can of sauce, plus a can of tomato paste. It will be flavored with italian sausage as well as ground sirloin. Even when I use a storebrand (Publix) tomatoes, it's never sour nor sweet.
