you could just look up canned mackerel in tomato sauce recipes online. the company that makes it might even have some on its website.

have you tried any of them? are they whole at all or just packed meat? a bit more versatile if at all whole. if its packed meat then make cakes/patties and fry them with a side of vegetables and rice or on a tortilla with a corn salsa. no reason to throw out decent food with a good self life because you cant find inspiration at a moment's notice.
