Since I'm running out of beans I brewed two 15g cups, one ground at 36 and another at 42, 36 was bitter aftertasty and 42 was sour hollow, which means flavortown is between the two. I hate this. Not really 1000$. The Bambino is around 400€, but there's a sale right now for 300€ and the smart grinder pro is 200—250€.
How much more entry level could I go? Delonghi Dedica is cheaper, but I don't think it's the right choice for milk drinks. And I don't know of any cheaper grinders that are any good.
If I ever wanted to upgrade I'd probably get a Niche Zero (that should be around 650-700€). But the goal is not to upgrade anytime soon, so I don't want to buy things I'd be disappointed with within weeks.

I forgot I was supposed to do a tasting and I let it get cold and now I have no more beans

38 bloom mixed together nice and easily and the extraction was nice and even, while 40 just had parts of the bed absorb the bloom water and not share it with the rest, and there were clumps on the paper I couldn't get rid of.

Tasting notes are meaningless because the drinks are so cold. All possible notes are overpowered by a biting harshness that I can't tell whether it's sour or bitter. I think it's lesser in 40 than 38 so it might be bitterness, but when I clean my palate with Sprite it's effects are reduced, and I don't know what that means.

But was I ever going to get good results with this $15/lb Amazon Special guat from Java Planet with all the badges? Maybe March is too long resting and getting to stale time?

New espresso machine checking in. After drinking that cat piss I went out the 2nd day and bought a nice medium-dark roast and everything has been fantastic since. Glorious coffee, glorious lattes.

The problem was obviously the well-meaning advice "buy good fresh specialty coffee from your local roasters".
But many of them are third wave hipsters who make only light roasts. They don't label them either, they just consider that a given and only print the tasting notes like "apricot, tropical fruit, ginseng".
And it looks like if you put those in an espresso machine, what comes out is sour poison.

The strange part is that, apparently, some hipsters nowadays DRINK that acid and say it's good!

Are you understanding what people mean when they say darker roasts are more forgiving? The darker the roast, the more soluble the coffee, the easier it is to extract evenly. Now learn how to dial in light roasts. Higher temps, finer grinds, longer preinfusion, longer ratio is usually a good place to start. Or just pull blooming shots or turbos.

Got some Mexican decaf from the local roaster, roasted about 2 weeks ago
Ground it up with my Breville, three batches at 36, 43, and 50
Some of the absolute muddiest beds and longest brew times I've ever seen, 36 took 9 minutes and 50 took 5 (guess how long 43 took)
Problem is that they all taste exactly the same with the same sour-hollow taste that says I underextracted
I did have problems with retention and the 36 batch did weigh a gram less than the 43 did the 50
Should I try again and make sure to hit my goal weight on the dot?
Or does it not matter and the next step is to try grinding even finer for a brew time of a quarter hour?
Or is that just what Mexican tastes like? was I supposed to interpret that sourness as sweetness and that's where they get the tasting notes "nougat, caramel, chocolate, creamy body"?

Pulled a dark roast shot on my Flair Pro 2 and despite how fast it pulled (~30s w/ 10s preinfusion) it still came out pretty bitter. Assumed the temp had something to do with it as I normally steam the brew chamber and try to get it as hot as possible. Didn’t steam it as much and lowered the ratio a bit and got a significantly less bitter shot. Still surprised how strong it tastes however. Is this typical for dark roasts? I usually drink medium-light roasts so this is a bit of a surprise. The shots have some of the nicest crema I’ve seen at least

The temperature can obviously be playing some role, but I believe most people note that Robot is only usually 3-4c lower than traditional machines, which would only be making a noticeable difference with lighter roasts.
Another thought is inconsistency in pressure leading to less texture and body in the robot shot. While it is easy to hit 6-9 bars in the robot, the pressure fluctuates much more than a traditional system, due to human inconsistencies.

For reference, I have a 9bar and robot and always enjoy the 9bar shots more than robot, which I believe is mostly due to pressure related reasons

51mm post-mill La Pavoni. So the basket size is different, but I did some quick maffs and worked out the dose I should do for a consistent volume, which lets me keep a similar grind between the two. (15.3g dose for the LP, 18.5g dose for the Robot)
I also didn’t think temperature should be so important since I use medium-darker roasts, typically with robusta blended in. But, I do keep my LP grouphead around 98c during the brew while I know the Robot starts at around 93c and quickly drops from there.
Pressure is an interesting suggestion. I try pretty hard to keep my pressure stable on both, but you’re correct that it is easier to keep the LP pressure stable. Even relatively small variations there could be changing the flavour.

As for “better”, what I mean is that the espresso has more complex flavour, including a lot more lingering sweetness, while the Robot has more of a bitter aftertaste, and overall a more simple flavour profile.

I’ve been brewing some sumatran dark roast coffee in my moka pot and shit comes out straight up undrinkable, it’s way too heavy and bitter; the only way to pass it up is making an americano out of it. I tried fixing the ratio and lowering the amount of water in the bottom chamber to avoid overextraction (currently at 200g of water per 25g of coffee) but it still comes out way too intense. Is there any way to fix it? Should I reduce the amount of coffee aswell? I’m starting to think this kind of very dark roast doesn’t go very well with the moka pot; unless I make a milk drink, or a very diluted americano out of it.

after copying both of their technique and then combining them and then creating my own style over the past 8 months has lead me to creating perfect brews every time.

also get a competition filter from E&B lab. if you dont you are literally cutting your legs off.

clean your moka pot after every brew and do a deep clean once every month.
use a high quality brand of kitchen paper towels and thoroughly wipe down everything, trust me even if it looks clean it isn't, it will still be covered in coffee oils.

the closer something is to our body temperature, the "better" we're able to taste it.

since you're accustomed to consuming a smaller cup, the larger cup likely took you longer to consume meaning the last 4oz was probably cooler than the last 4oz of the "short" cup you usually order. (don't reply to me about thermal mass, it's not enough to offset his slow consumption)

the cooler temperature of the bottom of the cup allows you taste the brew "better" meaning any imperfections are magnified, meaning you're more likely to dislike the flavor.

theres also the seperate issue that everyone has their own preferences of consumption. what i mean by this is i love steak. a good steak is amazing, but i would not like to eat two steaks back to back. you can only get so much of a good thing before it's not good anymore and that limit is different for everyone. your limit does not make you more sophisticated than someone who enjoys more.
