I made spaghetti colatura the other night, and it was pretty good for something so easy. Now I'm wondering if I can use colatura and/or Worcestershire sauce in tare for ramen or if that would be a sin.

My lasagna is my #1, it's got beef and sausage, ricotta layers. It's the go to Christmas Eve dinner in my family.

I haven't made it in quite a while at home, but I love a cold sesame egg or whole wheat noodle in the Summer, or a cold bowl of peanut noodles. Total simplicity of just sesame paste (or peanut butter) loosened up with a bit of soy, ginger, sesame oil, and chili-garlic paste (to taste). Tossed with noodles and refrigerated until cold. Served with toasted sesame seeds or crushed peanuts, and lots of green onion or cilantro. Ice cold and totally refreshing. Side of cucumber or a bubble tea.

What are the Asian noodles that are shaped like oval slices? They taste a bit like thick udon and sourdough. I've only had them in a cabbage pork style soup. I want them again and have never found them. Best noodles I've ever tasted.
