Yeah, before the internet was available to everyone, a VERY common recipe was to bake it in a bread loaf pan. Fucking everyone did it that way, and its literally simmering in a container of greasy meat juice.
For so long, everyone did it that way, and its gross. Its a boiled meat cake, and it earned a really bad reputation. Also social stigma for being extended with fillers and low class food.
Modern recipes can be quite good using proper techniques. But anyone with some years behind them remembers why its been considered bad.

Meatloaf should be cooked on a baking tray, never a loaf pan. You form it into a loaf-football shape for maximum amount of crispy edges.

I like to top mine with smoked bacon, rosemary, and a glaze that is a mixture of dijon mustard and bourbon maple syrup.

raw onion in meatmix can actually work, but it needs to be salted and chilled for a day or so. It will soften up and distribute/mellow the onion flavor. Probably still doesn't do anything good for food safety in that case though.
