furthermore, bread mold needs oxygen and is inhibited by co2, which a fresh bread loaf is full of due to the yeast. Keeping the heel covering the porous inner bread helps preserve what little co2 remains as the loaf dwindles, keeping the bread mold-free for longer. If you carefully push all the free air out of the bag every time you close it, you keep the bag environment totally hostile to mold; my loaves of bread will last a month or more if I don't finish them.
