I Never order fries anymore - sad. The fried chicken wings I used to love, I have replaced with a boil and broil method which is key. I don’t do tortilla chips or hard corn tacos at the Mercado. I do, however, go to this hillbilly fried chicken shack that fries everything in lard and is half the price of the fancy places. All of this because nearly every restaurant uses the lowest quality gruel oil they can find - very often soybean oil or a vegetable oil mix that is mostly söy. Sneed oils bad. Lard is good. Simple as. Going to get that fried chicken tomorrow on your recommendation. Twice or thrice a month doesn’t seem like it will kill me. In be4 Chick-fil-A uses peanut oil and that is good too. They do and it is better than sneed oil but I think they fry their chicken in

I use a carbon steel pan and haven't quite got a non-stick seasoning on it yet. When I'm cooking beef liver the juices will create a hard burnt layer on the pan that is really a headache to remove. My solution is to use a shit load of oil (virgin coconut oil), and without meaning to, I ended up essentially deep frying my beef liver. It works because my pan is not coated in that burnt liver liquid residue. But today I was frying liver again except this time instead of pouring the oil down the drain (not my problem) I cooked some left over rice in it. I flattened out the rice and it soaked up 80% of the oil. Then I decided why not fry 6 eggs on that oily bed of rice? My intention was to make a crispy rice crust with fried eggs on top. However the eggs were cooking too fast before the rice crisped up and I had to transfer everything to a dish before the yolks cooked (i like them runny). Next time I'll fry the rice to the crispy point then dump the eggs in. Eating it was surprisingly not that greasy given the 1/4" depth of oil I started out with in the pan. I'll do it again tomorrow.

"fried food" generally refers to anything that has been completely soaked in oil. Adding a bit of oil or butter to cook your eggs is fine and necessary, as long as you don't fry your eggs in an excessive amount of fat. Cutting down doesn't mean going cold turkey on all the evil oils and fats
