Bruschetta. Honestly I like to get those cheapo frozen Texas Toast garlic-breads and mix up a bunch of bruschetta. Probably a fun party snack.
Also like to dice tomato and chop spinach, and with maybe a little dressing and a sprinkle of parmesan, you're off to the races.

Don't put balsamic vinegar on it though, instead go buy the absolute best quality tomatoes, mozzarella and especially olive oil that you can, the best salt you can, the best basil you can. Again, especially thr olive oil.

Balsamic vinegar is just an American trick to cover up shitty tomatoes and subpar olive olive oil. If you invest into any good ingredients, balsamic will completely murder any nuance in their flavors.

The humble tomato sandwich. 2 slices of your bread of choice, usually toasted but you can go without, a spread of mayonnaise on each. Fresh ground black pepper. Thick slice of tomato, or multiple slices if you don't have a big beefsteak tomato that can cover the whole piece of bread.

I made up this salad myself.

I chop up a handful of cherry tomatoes, than I chop up a little bit of basil, then I crumble some feta cheese and i throw it all in a bowl. Then I add some good quality olive oil, some salt and pepper and some dried oregano. It is easy to make and tastes great.

Sautee some onions and garlic, chop the tomatoes and throw em in, let em go till the water is gone and shit starts to thicken, throw in some okra or green beans, remove from heat leave with the lid on and let the residual heat cook the Veg, don't let the Okra/Beans get soggy like a fag. Season that shit. I like (cumin/paprika/cayene/salt/pepper) Also if you got some sausage or bacon brown it off in another pan, deglaze that shit with some white wine and add it. Eat it over some rice.

I recently started using tomatoes on sandwiches. It's simple as fuck, but really good. And the tomato made a big difference.
A few meat slices, cheese, lettuce, tomato, and mayo.
Pic isn't mine, just something random that came up when I searched "sandwich with tomato".

It's stupid simple, but I really like tomato sandwiches. Literally just sliced, soft-crust bread spread with butter (I prefer mayonnaise, but butter is /traditional/) and topped with slices of tomato, sprinkled with salt, a few grinds of pepper and the second slice of bread, also buttered (or mayonnaised).
It sounds dumb, I know, but it's surprising how good something that simple can be.

Tomato bisque is so easy, you can even make it in the microwave.
Get tomatoes, tomato juice, water (or stock), onions, butter (or bacon grease or olive oil) and instant rice, put in a pot, bring to the boil, simmer until rice is cooked through then blitz everything smooth and salt to taste. I use plain water and a stock cube. I think it tastes better than using actual stock.

Chinese stir-fried eggs and tomato.
Scramble cook an egg or two. Remove from the pan. Stir-fry garlic and cut up tomatoes. Add ketchup and top off with a beaten mix of sesame oil, chinese chicken (or pork; I prefer pork) stock, mushroom seasoning powder and cornflour/cornstarch. Also sugar, if you'd like. Cook, stirring until thick then re-add eggs and finish with fresh chopped coriander and onion greens.

Chicken wings and tomato curry. Boil tomato, onion, ginger, garlic and lots of red chilli (I use one each goat horn, bird's eye and lantern) then strain when ginger is soft (it's supposed to be boiled in oil but fuck that noise). Blitz smooth. Par-cook some chicken wings in oil then, when nicely browned, add tomato sauce. Cook, stirring constantly, until tomato mixture is reduced and wings are cooked through. I like to add Chinese chicken stock cube to this as it reduces. Mix chicken grease or butter with curry powder mixed with fresh crumbled dry curry leaf and mix into the sauce along with mushroom seasoning powder. Also sugar, if you'd like. Finish off with fresh chopped coriander and onion greens.

Believe it or not, tomato and onion on hard bread with mayo. I had it first on a trip to Poland and I couldn't get enough of it. I don't know if has some fancy name other than "Tomato and onion sandwich". But the reason it was so great was that the bread I got in Poland had a hard crust which added wonderful texture.

I very regularly roast them, camparis are the best size and meaty ratio

Works in the toaster oven too. I put some dried parsley on them in the last few minutes before finishing them off but I'm not sure it does anything. Put them on top of rice or anything that will catch that tomato juice and oil if it starts to ooze and they're really ez and delicious
