I’d take a “formal location” any day of the week; I used to work for a Michelin Star restaurant and even though it’s hell at least it’s regimental as hell, so you don’t ever have to worry about some lazyass not doing prep and you also don’t have to worry about working in a filthy kitchen. Everything is extremely systematic and you don’t ever get the impression that it’s a chaotic environment. Sure, it was extremely stressful, but it was very organised and while it was an *extremely* tight ship I did appreciate it a lot. Whereas the typical fast food kitchen is a fucking filthy mess and I absolutely do not ever eat fast food anymore (it’s been over a decade since I’ve been to McTrash or any other fast food chain, once you’ve seen how the average fast food kitchen is run it’s hard to ever stomach eating at one). I’ve also done banquet at a five star hotel and again it’s tough work but the regimental boot camp-style environment does make things a lot more manageable.

Worked at a local chain in Michigan called Olga's Kitchen. It is a sit down restaurant and the food was almost fast food tier but not quite.
I got hired in at 24 as a waiter. I was one of three male waiters so it wasn't too weird. I stayed there for a little shy of 5 years. I loved it, I enjoyed the customers and my coworkers/bosses. I didn't care if I got tipped or not, I was surrounded by good people and free food. Waitresses varied from ultra hot jailbait to 40 year old chain smokers.

We all hung out after our shifts, there was a lot of camaraderie. We would all go to the local bar in the next parking lot, drink there till midnight and then head to the other local bar and hang out till 3am. Hanging out with a lot of female coworkers at the bar helps you not look like a creep, worked in my favor a couple of times.

The dishwasher was some 40+ year old 5ft skinny dude with neck tattoos and loved Skillet and Seether. He would bitch and moan about trust and loyalty and then never pay you back the 5 bucks he owes ya. Constantly hit on jailbait waitresses, constantly smoked. Lived in one of the shittiest areas in Metro Detroit (River Rouge) and would bang the ugliest Ogre looking chicks just to get a place to sleep at. Truly lived life on the edge.

The cooks varied as well. On one hand we had Tyrone the other 40+ year old guy. He was a smooth talker and 'always had you'. You'd call out for a sandwich that was missed, and he had ya, but he didn't. He had a list of names on his forearm of all 12 of his kids with different baby moms. He would walk out of a shift every 3-4 months. Sold shitty weed. Truly a character.
The other cooks were around my age and hella fun to work with. We would make jokes all day and shit talk each other. One instance in particular still makes me giggle:

It was a busy service hour, we have spinach pies that are made to order and take around 16-20 mins to make at least. Me being a waiter lost track of time and noticed it was at the 20 minute mark. The cook also forgot. I yell out to the cook to get the jew out of the oven. He looks confused, then a smile. He's like oh shit! He grabs his oven mitts and watching this dude contain his loud as fuck laughter and get this huge ass fucking tray out of the oven was hilarious. I just kept telling him to get the jew out! They were so close to being sent back but they were not quite burnt but close, very close.

Overall the restaurant business is hella fun with the right people. This goes for just about any job there, but the service was something different. The unknown of what type of people come in and sit down have a lot of different stories and things to say. Some days it was fun, some days it was hard to think. Overall I loved the people I worked with and it was a lot of good times there, I learned a lot of people and customer service skills there and has helped out my career overall.

Big ass hotel trays and stock pots full of hot greasy liquid that you'll likely have to lift over your head, the consolidated trash/recycling/compost that you'll have to take out at the end of the day, or that bucket of disgusting mop water that you'll have to tip over the toilet. True, there's some things that will end up being over 20lbs, but there's ways to mitigate that.
All kinds of carts to haul stuff around on so the actual lifting isn't but for just a second, there's no lugging stuff all over the place unless you just want to. Also, stuff like the trash can just be emptied before it gets too heavy.
I guess different joints will have different situations regarding all that, but in general there's more ways to work smarter instead of harder, at least compared to the construction I did back in the day.
The construction I did was dog shit, and the pay wasn't actually better than kitchen work, and there were no benefits. And in the summer it gets up to like 110F. I got heat exhaustion so many times that I just can't WORK my body out in that bullshit anymore. It just saps my strength in no time, but in a climate controlled kitchen, I can go all day like a machine. If I start getting overheated in the hot part of the kitchen, I can go to the walk-in to recover.

At least you get to have a social life working in construction. Being scheduled to close 5-6 days a week is mad depressing. I also have to admit that scrubbing, wiping down every little surface and taking the trash out by myself at the end of multiple full shifts with only one 15 minute break was back breaking work for me. You can do it all smart but at the end of the day it's still a large volume of manual labor. If you're particularly reliable, skilled or hard working you'll just be given more responsibilities and be expected to take up the slack from the lazy fucks that have tenure. I work in a (pastry) production kitchen for a fairly big cafe/restaurant in Melbourne, it feels like an intermediate between a service kitchen and regular 9-5 I guess.

Regular set 5 days (not usually weekends), proper HR with no split shifts but early starts.

The work is not peaks and valleys like services though, you're flat out all day with zero downtime but without the fun/rush. Much more specific knowledge/work and sometimes you feel like a factory worker than a cook.
