I make sushi. Its not really that hard, but if you don't get the rice texture exactly right things can get really messy.

The main problem with making sushi is that unless you want to eat 30 pieces of the same thing you need a bunch of different ingredients (all prepped to the correct size and length) and it becomes unbelievably time consuming. God help you if you want to put tempura in a roll.

Rice is going to be the hardest part to get down. Use short grain rice, rinse then soak it for about 30 minutes. After that, drain and cook as normal.

Once the rice is done, take it out, and immediately add the rice vinegar while using a flat paddle to evenly coat the rice while fanning the rice to get it cool. There's a short window of time to get it right. Ideally, set the rice to the side to cool a bit more after that.

You can buy the vinegar pre-made. It's basically just rice vinegar with a lot of sugar, salt, and ponzu juice dissolved in it.

When you apply the rice, pat down a clump along the top edge with a narrow stripe left bare at the top, then you'll sort of roll the rice down into an even layer. The roll should hold together, but you can smear a thin layer of crushed rice at the top to ensure everything sticks together.

There's really no need for the plastic wrap in that image for the roll it's making. The plastic wrap is for when you do rice outside rolls.

If you're making a hand roll, you don't even need a mat.

Spicy tuna is usually just sriracha, a chili paste called youki, and chili oil. Kewpie mayo can get thrown in as well.

Following that, it's a matter of what type of fish or vegetables you're using. Smoked salmon and cream cheese are easy to get a hold of. Use the meat and save the skin to fry. Smoked salmon skin rolls are fantastic.

The best deep fried sushi I ever had was some kind of specialty roll with cream cheese in it at this place in LA. When they deep fried it the cream cheese got all warm and gooey but the fish was still raw, not sure how they did it. It's not complex and I never said that was. I do think it tastes nice and I enjoy it for what it is. It's a simple combination of flavors that all balance out (the fish, the vinegary rice, the wasabi and the soy sauce). It's a supporting ingredient that's not strong enough to hold its own in a roll. If you must get a vegetarian roll, go with kampyo or oshinko, or just get sweet tofu nigiri. There's plenty of options. Avocados are a bitch to maintain with a short shelf life. They shouldn't be refrigerated, but they are to prevent fruit flies from swarming. It leads to shitty avocados.

They're the single biggest point of failure on a sushi bar. I'm convinced the only reason sushi bars stock them is so chefs can steal them to make dishes more appropriate for them as they're too vague for owners to charge for. I used to live off avocado salads.
