What's your go to brine? Mine's 30 grams of salt per kg chicken, couple dls apple cider vinegar, a few whole black pepper corns and a couple of crushed up bay leaves. Fill it up with water and leave in fridge 24-48 hours.

I dry brine since I get chicken with the skin on. 1 tsp of a msg and I+G mix (98:2), 1/4 tsp baking powder, 1tbsp garlic/onion powder all per lb.

Even then, just wiping it down with a cloth is a better practise than actually "washing" it. Its the running water, that splashes around(droplets you wouldnt even notice or see) that spreads bacteria and pathogens.

That said... If i have chicken thats past expiration that was stored in my fridge... I'll clean my sink out and carefully rinse them down(trying to wash off the toxins from any bacterial growth) and pat them dry, salt them, and cook them to 170F. Then i do a complete wipedown of everything in my kitchen with lysol since odds are its filthy even before i introduced all the chicken droplets.

brining can be as simple as enough water to cover the meat and salted enough that it sufficiently salinates

Old wives tales arent unique to black people. My mom used to wash chicken (but not any other meat) in the sink until I explained why it made no sense. Her mom probably taught her and she just assumed it was the right way to do things.

I do it as a meme, but I also think it's good practice. Washing your chicken
before cooking it helps to remove any bacteria or debris that may be on the
surface of the meat.

1. Cooking your food properly will kill all bacteria.
2. Washing could only affect the surface, not the inside of the meat.
3. Washing will spread the bacteria around your sink, which you most likely do not sanitize afterwards.
4. No chicken you buy in the first world is going to have "debris" on it.
