For some reason I simply cannot stand the taste of bread made from whole wheat dough. The slightly bittersweetness just completely grosses me out. I’m not even a picky eater, I have an extremely adventurous palette, but for some reason whole wheat flour pisses off my taste buds. Is it some repressed childhood trauma?

the flour is probably old and the fat in it has started to go rancid. whole wheat does not stay fresh very long at room temperature.

I agree, but I do use it for Boston Brown Bread. It is perfect only for that.
