Do you use a tortilla press or just smash them on the counter. Also, do you make your tortilla mix yourself or buy the premade store bought stuff? Asking because I've been looking into making my own tortillas lately

It's dead simple. I use chef john recipe. I use ghee for the fat. I reduce dat in half though. He uses too much. I don't have a press. I knead until it's a soft smooth pliable dough and then roll out with a pin
