As someone who's had Chinese food in China, Hong Kong, USA, Mexico, Panama, Ireland, and the UK, I can whole heartedly say American Chinese food is the GOAT Chinese food, and potentially up there as one of the GOAT cuisines out there. Chinese Chinese food isn't as bad as British Chinese food but goddamn is it unsatisfying. Pretty damn bad. steamed fish is as simple as you can get

>fried garlic
>coriander
>light soy sauce
>sesame oil
Drizzle soy sauce and sesame oil over fish, cover with minced ginger. Let sit for a while before steaming for max infusion. After steaming, top off with the fried garlic and coriander. That's an authentic chink household dish there, you can't go wrong with it. Just remember to watch for the bones, or just use a de-boned fillet if you're not used to it.

What I remember about Chinese food as a young kid growing up in Hong Kong was not really that it was “bad” (which it often was, of course) but that the stuff my parents ordered for us was almost all frozen, and that I would generally throw out whatever that they brought home. This was in the days before a proper kitchen, and there was a tiny freezer unit that could only hold what was on the top shelf, and often that was some random combination of Chinese or Indian takeout. A couple of times a week we’d have what seemed like the best of everything, but the rest of the time it was pretty terrible: a frozen piece of some meat and whatever was frozen with it, a tub of rice, and maybe a can of green peas, and maybe a can of baby corn. There was a few times in my childhood when we were treated to something really good, like fresh fish that one of the waiters brought home in a plastic bag. So for my first couple of decades, I never actually ate a lot

Portions are small and taste disappointing
Those fucking cheesy beef skewers are a fucking joke.
They choose the worst possible cuts of pork, the gross chewy ones.
The vegetables cooked on the wok are not just hard as fuck but sticky as wellthus they're a pain in the ass during and after eating them.
They put chili peppers in the wok as well, spicy alright but inedible, can't fucking chew them, they're burnt beyond repair, it's like eating plastic.

Is it just bad luck and there are decent chinese resto out there? Or I am right and it's the worst fucking cuisine?

if you want it crispier you have to deep fry multiple times, take the meat out->heat oil back up->repeat 3-4 times. much tastier if you slow cook the oil and add shallots and some veg (I used lotus root)

here's an easy beginner soup with a cheat

I reside in Taiwan. The typical food here is absolutely disgusting. You have to go to a seriously good restaurant if you want non-disgusting Chinese type food. Random boiled intestines in so much spices that you can't taste the shit flavor of the meat, industrial waste oils substituted for food oil because the restaurant owner wants to save 3NT toward their next Mercedes purchase, mystery meat that might or might not have come from a pig farm but even if it did probably isn't pork.
