I have a shit ton of these, and I don't know what to do with them. What are some foods that go well with this soup?

Use them as a base for vegetable/vegetable beef soup. Carrots, celery, onion, garlic, peas (optional), potatoes, mushrooms (optional), and beef with this stuff is great. and you can make a fuck off huge pot of it and then freeze all the portions for work lunches and shit.
