It has more fish, so if you want more fish flavor, then go for it.
Left has less fish but seaweed adds tons of flavor as well. Texture is different as well.

Both salmon and ahi are pretty basic bitch, but I usually do a teka maki if I'm trying a new place and only get salmon if it comes with some combo. If I'm ordering nigiri I'll probably pick something more interesting. Assuming you thought those were the same kind of fish, the right is more expensive because you're getting more fish and better cuts; they can throw scraps in maki and you wouldn't know the difference (that's literally the entire reason spicy tuna rolls exist).
