The entire problem behind ruby chocolate is its retarded marketing tagline: "the mythical fourth kind of chocolate"!
There are lots of kinds of chocolate. The whole "three kinds of chocolate" thing refers to typically processed chocolate with varying amounts of cocoa butter vs cocoa solids. Ruby chocolate doesn't fit into this spectrum. It's just another differently processed chocolate, of which there are many.
Call it the fucking "fifth type of chocolate", because fucking blonde chocolate already existed but nobody tried to hype it by calling it "THE fourth type of chocolate".

Ruby chocolate was such a commercial failure that in Canada it is sold as part of the discount brand at Superstore. Both ruby and blonde are $2 per 100g bar.

I like blonde for cooking, you can substitute it for white chocolate since it is cheap and high % cocoa butter.

Ruby chocolate isn't that interesting on its own, you can also substitute it for white chocolate and the color hangs around. It tastes a bit fruity but if you compare it to white chocolate with actual strawberry/rasberry you realize its a shitty immitation.

Superstore has a ruby chocolate bar with coconut and freezedried rasberry which for some reason is only $1.50 and its delicious for the price but you can't use it for cooking since the inclusions will fuck up any texture.
