I typically cook them in addition to pork sausage to add more volume. i can't imagine just cooking lentils by themselves without any meat. aside from perhaps the Indian dishes where they cook them down to mush

there is an argentinean/uruguayan dish, guiso de lentejas that is pretty good. you can google recipes for that.

I also make a different variant thats more of a sloppa version of that:

rice, lentils, ground beef (i usually make this and then kind of dice it), tomato sauce, seasoning.

Cook rice and lentils, then cook ground beef in pan.
Add tomato sauce as you're cooking, and toss in salt, pepper, oregano, onion powder and garlic powder (can sub these for actual onions and garlic if you choose but im lazy).
then add rice and lentils and stir fry together, and add more seasoning. some people add a pinch of sugar as well to cut the acidity, but i don't personally. quick, easy to make, good tasting sloppa.

marjoram tastes like marjoram, i don't know what to say off the top of my head other than "dried herb". normally i would just use fresh parsley but my parsley has been struggling with the weather lately

I often fry some Speck crispy before I eat it and add it to the lentils.
