love it, i cook mine in tomato sauce and add carrots then blend up the leftover sauce on my pizzas. I know it's sacrilege but it tastes great

i don't really have a recipe i just wing it and it's far from traditional
i use beef kielbasa cut longways into 5" inch strips (personal preference for sandwiches ) and just give it a quick sear then saute the peppers, onions and carrots(not very much carrot) then add some garlic and the tomato sauce and let simmer for however long is convenient.
All of the sausage gets eaten and most of the onions, peppers and carrots and then i use a stick blender to smooth out what ever is left and use as a pizza sauce the next day. It's crazy flavorful, i normally hate sweet sauce but the slight sweetness from carrots doesn't seem to bother me here.

the pepper and onions are cut like my first pic but i cut the carrots into discs/wheels because i find it more manageable for a sandwich and they seem to cook better, pretty much when ever the carrots are soft its ready to eat
