why do the global recipe cartels keep pushing olive oil and canola (aka RAPEseed) oil? Why do they hate lard so much?

Lards and tallows are high desirable byproducts of the butchery industry and have long-since been an important part of steel-milling. The bits that used to trickle down into cooking were undesirable and poorly refined byproducts of byproducts.
Historically, people in different regions have used palm, olive, and soybean oils for cooking purposes for thousands of years. It makes you wonder why the tallow and lard industry is somehow trying to get out of the machinery lubricant field. Is that becoming unprofitable? Is it easier to sell their rendering factory muck to trend-following idiots who think "MEAT MEANS GOOD?" even though they are unable to bring up zero historical precedent for the use of lards and tallows in anything but poverty cooking when it's been used as an industrial lubricant since the time of the ancient Romans?

Well, who knows. Now say "seed oils" again.

Olive oil is pushed for a few reasons. One is that it's one of the healthiest oils on earth. The other is akin to wagyu beef and other meme foods.

canola is the opposite. Canola is pushed because Canada didn't have any good exports, so they invented that to export it Can(ola) (Canadian oil). Because canola is a brasica and therefore can live in colder weather i.e. most of canada's climate. I am aware china exports more of it.

Canola oil is also cheap as fuck and great for fast food companies that don't care about a consumer's health.

Soybean oils dated back before the Qin era, palm kernel oil and olive oil coexisted in the time of Julius Caesar, sunflower oil is over 200 years old, and you're a fucking idiot who can't support his bizarre delusional claims.

A lot of oils are industrial waste products, particularly grapeseed oil, corn oil, and soybean oil. They want you to pay them to dump their waste into your body instead of them having to spend money to discard said waste in an environmentally acceptable manner. It's the same story with water fluoridation.

There is also a lot of bad/corrupt science surrounding dietary fats/oils that the health authorities have clung on to which claims that saturated fats LE BAD, and polyunsaturated fats are "heart healthy". For anyone who does any actual research on the topic, it becomes quickly apparent this narrative is completely backwards, to such an extent that shilling PUFA filled industrial seed oils to the public should be considered a crime against humanity. But because of the ambiguous and unscientific nature of nutritional science, they get to plead ignorance, and the layman is either too dumb or too busy with their day to day lives to notice.

I personally use grass fed butter and render my own tallow from grass fed organic suet that I get from a local farm. My body feels amazing after I eat that stuff, as opposed to how terrible I used to feel after eating anything cooked in vegetable oils. I still occasionally use extra virgin olive oil for certain dishes, but I've cut back a lot on it because I find it too troublesome to make sure my olive oil isn't fake or laced.
