i usually make a traditional gravy whenever i sear beef for anything (unless its a stew where i use it), just plain jane with beef broth to deglaze and butter/flour to thicken, and whatever herbs I've got stocked. I double fry the fries just so they can sop up as much as possible, and in Canuckistan you can find cheese curds stocked pretty often. Throw it together when you're plastered, and you're golden. That said, make sure the gravy's nice and thick, it should never be too runny. Also, traditionally, crispy fries arent the proper way of going about it, I just like the coating holding onto more sauce. A single fry is more than enough.

Neat. I don't usually like to deep fry stuff so I just bake my fries at different temps (coated with oil/spices and baked at 375F for 20 min and 425F for 10-20 min, depending on thickness). Actually my favourite shawarma place was Castle on Rideau in the early 2010s, their spicy garlic sauce was unbelievably good and I lament that I will never experience such a flavour sensation again. They got shitty in their final years though.
Imo Shawarma Palace is overrated but the one in Barrhaven is consistently good. Just pissed they replaced the pickled turnips with cabbage. Ottawa Shawarma on Greenbank is also great

I make my own poutine using my own sauce and fries. Since you need sauce espagnol(tomato-based chicken stock), I often put chicken in my poutine. Breaded chicken filet, but if I was lazy I would just use frozen tendies and frozen fries. However never compromise on the sauce, since it's so easy to do and all the store ones are trash.
