What's an easy to make meal I could make for lunch and dinner almost everyday without getting any nutritional deficiencies?

buy chicken breasts and frozen bags of broccoli florets
take the broccoli from the bag and a chicken breast and put it into a pan mixed with olive oil and spices and oven it for 30 minutes. easy and healthy, I could do this every day.

I usually oscillate through chicken thighs, pork chops, ground beef, eggs, sometimes fish for protein

Then I pick 2 veggies of whatever I feel like that day. Choices include: green/red pepper, sweet potato, mushrooms, eggplant, bok choy, green beans, broccoli, you get the point.
Then I pick a carb, recently it's been couscous but it could also be rice, quinoa, tortillas (if ground beef, e.g. burrito/taco).

Just keep mixing and matching and you will be fine

Beef stew. You can make a tonne at a time then freeze and re-heat when needed. As long as you use enough meat you'll get all your nutrients. You can mix a bit of liver and bacon up in it as well for some extra nutrients that the beef might be missing.

also I should add that you should take into account if you want to lose weight or gain weight. and even if you do want to lose weight, "healthy" carbs/ sugar sources and fats are still essential.

Personally I'd make sure I have
>decent quality meat, sometimes more lean sometimes more fat
>lots of veggies
>lots of fruit
>some added "healthy" fat like lard, oil, nuts
>some diary esp "drinkable yogurt" types like kefir
>bit of added carbs like rice, bread
