Call me schizo or whatever but I won't eat 90% of ingredients (they are poison) and make almost all of my own food at home. I used to like hot sauce a lot, but now I can't eat most of them. How do I learn to replicate the flavor of my favorite hot sauces? Obviously I'll bite the bullet and eat a little of the original sauce if it's necessary to recreate the flavor.
If anyone has a recipe that tastes like Dirty Dick's, that would be great.

Capsaicin is an alkaloid chemical that a plant is using to harm you. It is literally a toxin - with an LD50 of ~47mg/kg in laboratory mice.

look at the ingredient list. the order they're gives you a very rough idea of quantity. then experiment until you like it. but as far as what flavorings they use you're pretty much fucked unless they decided to list them. since you're making it yourself it will adjusted to your tastebuds so it will taste better. try making diy ketchup first and see the difference for yourself. if you don't add a preservative it's not gonna keep as long in the fridge tho.
