slice it thickly long-ways - salt it well and let it sit for 30 min - then flour it, dip in egg mixed with water, and then breadcrumbs or panko - let the breaded eggplant slices rest or even chill in the freezer - then fry.

It should be crisp on the outside - creamy on the inside.

Eggplant is just a nice alternative vegetable for fussy people who won't eat meat and a good change of pace as well.
