It's actually totally different. While Christmas pudding is a stodgy, well, pudding of dried fruits and malty flavours you've gotta balance out with brandy butter or cream, summer pudding is like a bowl made of bread which has been soaked through with fruity syrups and stuffed full of sweet and tart summer fruits. It's definitely a lot lighter though lol.

Jacques Pepin specifically recommends potato starch over cornsttarch in one of his videos. But I bet you could easily get the milk to solidify like that with a thick roux, so it would essentially be a bechamel sauce.
