Recipes like this are usually fine, but I dodge anything that has a watery vegetable. (Literally any vegetable that will steam off its moisture when cooking.) For personal convenience i can actually understand your point. But that's not what I'm about. If i had guests over or was just cooking for the family I'd never offer it on disposable plates. I once made a curry and being a dumbass thought I'd save time by buying pre-diced lamb instead of cutting it myself.

The meat was fatty crap, but I thought it'd be okay and tossed it all in once it was time and set it cooking.
When I came to check on it the curry was really watery, so I left it cooking longer than normal to reduce. Seemed to take ages, and it didn't reduce a lot.

What I'd actually done was boil off all the water and burn what remained of the meat, spices etc in a massive pool of rendered fat from the shitty meat. I actually tried a bowl hot and it was vile.

When it finally cooled down the fat all set and it was just a pan of rank shit. Tossed the whole lot.

its the first time i applied a modicum of effort to plating. the eggs were too old, yolk stuck to the air bubble and after the sous vide cooking i ended up with fucking runny whites and almost fully cooked yolks.
somewhat fucked up the hollandaise since it was too runny, 100g butter for two yolks, dunno what i did wrong.
still a very enjoyable meal overall tho.
