You're right. There is practically no originality in the restaurant scene. Every new restaurant that would open would be the same hipster gastropub menu done 10 times already. Or a gourmet version of some cheap regional dish that snobby urbanites dress up and sell to saps as a novelty, because they have wouldn't know otherwise. The one caveat is that Seattle/PNW has some really comfy and good breakfast places. Also, amazing seafood, but go to a restaurant to get it, just cook it yourself.

I think some of the best experiences I had there were just cooking clams on the beach or eating fresh oysters from a small fish market.

Here in Seattle, the birthplace of chicken teriyaki, our streets are paved with the stuff. All strip malls are required by municipal statute to have a minimum of one teriyaki joint. Our faucets have a third knob for teriyaki sauce, and a fourth knob for that sticky sweet salad dressing. When you stop at a traffic light Koreans knock on your window and try to force teriyaki and evangelical Christian leaflets into your car. The best pizza place in Atlanta literally doesn’t let you pick your toppings and puts a asshole-shattering Calabrian chili pepper on every bite. All the chicken and waffles and collards and grits are made by hipster bearded tattoo soy white guys from Gwinnett County or New Jersey. All that’s left is $6 (per) vegan tacos, maple bacon bourbon butthole brussels, and criminally bad poutine. The real estate market is doing everything they can to kill the only good part of this food industry: the authentic ethnic restaurants on Buford Highway and 14th street.

Common misconception. A lot of dishes just got adapted because when the poor European immigrants showed up to farm and mine, they found local prices were different. Beef was massively cheaper since American land at the time was more conducive to raising cattle, so classical pork dishes were substituted and became Americanized with beef.

Instead of mettbrot with raw pork and onions, you have the cannibal sandwich with raw beef and onions.
Instead of weisswurst with uncured veal and back bacon, you have white-hots with uncured veal and beef.
Etc.

Then there's the American ideal of convenience applied to classic European dishes. Frozen perogies, freezer pizzas, etc. which got back-imported into European culture. (Thanks, Germany...)

Another weird trend: adapted dishes with names that reference their European origins but are mostly unfamiliar to people living in those countries now. Polski ogorkie pickles, Ukrainian sausage, kielbasa: very generic terms which refer to specific European-originated dishes in America.
