Baja prawn tacos.

Made Flammkuchen, think of it as a german&french pizza that is substantially easier and quicker to make. Not the most aesthetically pleasing, but tasted pretty great.

Unleavened, which makes it easy as shit to make. No fermentation, no rising of the dough.
For each flammkuchen I used roughly
150g flour (german type 405, probably close to AP flour)
65 ml of water
a tsp of fat (oil or lard work)
and a pinch of salt

Mix with hands, then add a splash of water at a time until it feels right, but usually within the 65-75ml range is good. Instead of tomato sauce you top it with "schmand", which is basically like a form of creme fraiche, just make sure to have 20%+ of fat or it will seperate in the oven. Spice the schmand (salt+pepper+nutmeg for savory, honey for sweet), roll out the dough as thin as you want (I usually go as thin as I can while still being able to fit it on a tray), and add toppings. onion, leek and bacon are the "classic" but honestly anything goes. Preheat the oven to as high as it'll go and put it in there until the edges are crispy and almost burned.

Nice. Had this with just penne the other day. For thickening just brown some onions before adding the spinach and cream. And with brown i mean fry them until you feel they're just about to been and turn black. This will create a thicker texture paired with the cream. If that's too risky for you, you can always add cream cheese or parmesan. Whichever you prefer
