Italian, Mexican, and to some extent Japanese food (even though I'm a weeb) bore the FUCK out of me. Like holy shit. I will eat it if you gave it to me and I was hungry, but I'm not gonna cook it and I'm not gonna seek it out or pay for it. I basically want someone to explain to me in exhaustive detail why you like the food of these countries, if you can spare the time. I simply don't get it. The flavor is simply not there. There's no kick to it like Moroccan and no hearty bite to it like German food. For one example, spetzle mogs rice several times over. Way more fun to eat and more versatile

I hope this is pasta. Every moroccan dishes taste like cumin and/or is overpowered with spice and german is one of the most boring cuisine in europe, they have really good bread tho.

Some mex stuff sucks but most of it is really good
Italian food is better in the us than it is in italy as crazy as thast sounds
I do like german food as well though
Brits have a few good things like BIR and crumpets
Spanish food is over rated out side of the amazing meats
Indian food might be the most impressive
Learning french food will teach you about cooking even if its not your bag

I dont think i've tried mexican food but japanese food sure is boring to some extent.

But I wouldn't say japanese food is that bad if you make some small adjustments, yakiniku for example is rather plain on its own since the meat doesn't receive that much aroma from just stir frying. I usually try to marinate it in olive+sesame oil with some salt pepper and a tiny bit of coriander and then I barbecue it with a lid, the vegetables are stir fried as normal, and the taste is entirely different with smoke flavor. Same goes for sushi really, cold smoked salmon is just way better imo.

Ramen can also get really good if you use chicken or pork that has been barbecued on charcoal and have a marrow bone from moose for the brought.

Japanese food can be surprisingly bad if done wrong. But thats why its Japanese food. In Japan its a highly competitive Restaurant environment with a culture known to take pride in their work and familiar with the concept of shame. Every dish of japanese food Ive had in outstanding and "wow you fucked that up" form. Its the Popeyes chicken sandwich of cuisine. When its done right its awesome.

When I lived in Japan I didn't feel disappointed at a single restaurant I went to.

Outside of Japan, I haven't had a single Japanese meal that wasn't disappointing.

Japanese food has an imperial background. A lot of dishes are highly complex and immaculate. More Umami based, often sweet, especially compared to neighboring countries. If you can’t appreciate those things, then it’s just not for you. Maybe try Hawaiian first since it has a lot of Japanese influence, it would be a gentler transition. Musubi and Poke are a good start.

Mexican food is amazing, especially if you like something as exotic as morrocan. Something tells me you’re from Europe, I’ve heard their Mexican food, especially in UK is piss poor. If you’ve been to America and had a real taco, then that’s fair. But you should still try a tamale or empanada which are more Central American. Mexican cuisine can be quite diverse, ceviche originated in Arabic cuisine, Albondigas is tasty.

I’m not crazy about Italian either, even though I’m half. But Fungi risotto is something in itself. I had it in Venice and even my 12 yr old dumbass mind was blown away, really savory. So don’t write off Italian as Mediterranean slop with tomato and young cheese drizzled in olive oil.
