I've been making bagel sandwiches like a madman lately. Just made this here for breakfast. Ricotta, bacon, caramelized onion, grape tomato, cooked spinach and then the egg. And the bagel itself is some "baguette bagel" I saw at the grocery store, pretty good.

It's not that complicated, each of the toppings is pretty simple to prepare. Just sliced some tomatoes and cooked some onions/spinach after the bacon was done. If I'm lazier about it I'll usually just do the tomatoes and spinach.
