I was going to say the same, but elaborating on what I do to make them as I like them:
1. Wash off potatoes and dry 15-30 min (guess you don't have to)
2. At roughly same time, preheat oven to 425F. Put tin foil on the rack for easier cleanup, but not necessary.
3. Poke holes in them so they don't split in the oven
4. Coat with olive oil, sprinkle salt all over skin
5. Cook for 1 hour and 15 minutes, turning over once about halfway through
6. Immediately take them out, split open, dice insides with knife, and put butter on them to melt in. Use whatever other toppings you'd prefer.

The big caveat is time, but if you plan ahead it's what you're looking for.

Roasted red potatoes are super fucking easy.
You give 'em a scrub with water to remove the growths, I use my hands and fingernail because fuck effort.
Cut 'em up into like 8ths, 12ths, or 16ths, whatever, putting them into a mixing bowl.
Add olive oil, salt, pepper, garlic powder, optional other spices and give everything a good toss.
Then throw them on a tray lined with foil in the oven or toaster oven for like 40 minutes at 400f plus or minus.
5 minutes of effort tops.

One of my go-to sides besides white rice or goya rice because of how easy it is and cleanup is only one mixing bowl.

I've found there is a definite taste and texture difference in parboiling potatoes before roasting them.

Boil water and put vegetables into the pot. Wait until ready. That's it.

Carrots, onions, tomatoes, celery, frozen vegetables--anything you want. Chop them if you like, or don't. Once everything is in, lower heat to medium, put the lid on, and go browse 4chan or whatever until the carrots are fork tender; usually 30 minutes. Salt and pepper to taste, then serve. Freeze the rest.
