I drank a bottle of Moscato d'Asti today.
Was relatively OK (very low alcohol for a wine), but not really sold on the sweet fizzy alcoholic grape juice thing. I like drier wine with more character.

I've been buying a lot of riesling lately for some reason, picrel I had last night, I've got a kabinett and an auslese from mosel in the fridge

According to 4chins this grape is "controversial" or something

Then again people get butthurt if you say "alvarinho" and not "albariño" so I think /ck/'s resident winos are just looking for reasons to get offended

Riesling can be anywhere from super sweet to bone dry, it's a god tier grape.

The cheap stuff lacks acidity which is what makes it unpleasant to drink. With enough acidity you can have a lot of sugar and it still tastes good.

Drink it with spicy Thai or SEA food, also goes well with an egg and bacon sandwich. But it's a dessert wine so have it with eggy fruit desserts, or light not too sweet sponge cakes, angel food cake with strawberries or pancakes

I also bought some 2-buck-chuck-tier dry Lambrusco. Gonna try it today and see if it's vaguely drinkable.

It's (mostly) desert wine, Anon, and I'd only drink it for a dish where I'd want more lightness and freshness than a Sautern or Tokaij. Have it with strawberries, sponge cake or ice cream with complementary flavours.

My father had his own wine cellar and he always had a few boxes of this riesling on hand. It was pretty good stuff. If he wanted a more buttery white wine he'd get Le Bouteau.
I wish I could remember all the names of the vinyards but he had several kinds of pomerol, beaurdoux and bourgogne as well as some other stuff within reach.

Good taste, Anon. Bourgogne Blanc is delicious, especially Meursault wines.
Chavy-Chouet Bourgogne Les Femelottes is a good, slightly cheaper alternative (like 60 NOK less), but your Les Parcellaires de Saulx Bourgogne Les Mursottes Chardonnay is overall better. If you're willing to spend 539 a bottle, try Louis Jadot Meursault Narvaux. I'd recommend trying Fabien Coche Meursault Les Luchets if you're feeling luxurious, but it appears to be sold out.

What I'm asking you to do is consider that maybe it goes with certain specific dishes, endemic to countries outside of western europe, which perhaps you could consider naming (the dishes not the countries). But more importantly, how about venturing outside the "other cuisines" section that they skim over in sommelier school, and thinking for yourself?

I kind of get what you mean Edward Said, but I often find pairing recommendations are generally vague. The picture is the recommendation from the wine producers website. What's a "savoury first course" what's a "rich" sauce?

Well funnily enough I paired a dry Sicilian moscato recently with aguachile verde with tostadas and poisson cru with rice which was really good, I think a sweet moscato would go with shanghai mantou or char siu sou

I'm not going to get too specific because my short list of statistically improbable pairings is going to get me doxed due to my ranting about this elsewhere online.

Point being it doesn't have to just be moscato riesling and gewurz. It doesn't even have to be just white wine. It's just that some guy created this meme, probably decades ago, and people have been beating the dead horse silly and causing generations of drinkers to simply dismiss the concept that non-european foods could possibly be consumed with "serious" wines. I mean that's probably something a dumb new money chinaman would do right? Everyone knows you can't pair red wines with oriental food. Especially not any "serious" red wines, though possibly lambrusco, schiava, and wines of that style.

Look Fanon, you should use the Gourmet Traveler website, I like their parings, it's a recipe website but sometimes each recipe has a pairing, they have a recipe for essentially Lamb Korma paired with Barolo which I tried and was good https://www.gourmettraveller.com.au/recipes/chefs-recipes/avanis-lamb-curry-7908 I think it's because Australia is new world that they don't mind doing what you want to see more of.
