First of all, jumping straight into veganism is a terrible idea, even for people who want to be vegan. See if you can start off with only 1 vegan day per week, and then working your way towards 6 vegan days per week, keeping a cheat day for non-vegan food until you're both equally committed. But assuming that your marriage is heading towards veganism anyway, let's work on avoiding Impossible and Beyond.

Shop separately from her. Buy mainly grains (rice, wheat, corn, quinoa, etc), legumes (beans, lentils, nuts, tofu, etc) and vegetables. Keep the receipts from your purchases separate from the receipts from her purchases. Cook your own vegan meals separately from hers, but share yours with her. After a month, add up receipts. See how much you were spending on veganism versus how much she was spending on veganism.

When she sees the price of her foolishness, Impossible and Beyond will go from a once-per-day essential to an occasional treat just a few times per year.

Good luck, and don't forget to look for foods with Vitamin B12 (like nutritional yeast) and Omega-3 (like flax oil), because otherwise you're going to be pretty deficient with those.

I rather eat smoked tofu in stir fry than some processed shit that needs shittons of fat to taste ok. Tofu is also way cheaper than meat/vegan meat, so I don't really get why products like beyond meat exists.
I had a little health scare when I ate lots of meat/eggs that manifested in my left arm being looking white/anemic, which solved itself after eating tofu for protein for about a week instead of animal products. I got so used to the texture of firm tofu that I actually prefer it to the mouthfeel of meat. And spending way less money on food is nice.

The best way to reform meat production is to support small farms. Like, actually talk to and get to know small farmers. A lot of big agricultural laws make it very difficult for small farmers to make any money. Veganism is not going to solve that problem as these issues extend to crop production. Look into the book "Everything I want to do is Illegal" by Joel Salatin

I'm also not interested in sustainable farming. Our environment is degraded, why would I want to sustain that? I'm interested in regenerative farming. My livestock are not only sustainable but healing the environment they live on.

Ground water is fucked due to large scale ag. Especially tillage and petrochemicals from fertilizers and pesticide. A lot of small farms will rely more on polyculture, which makes less land yield more and also makes it more resistant to pests. Including animals in the mix makes you not rely on artificial fertilizer.

My land uses no artificial fertilizer, I only lightly till for my sweet corn and then never till that spot again, and the only pest deterant I use is a spray that is made of garlic and mint that just makes the plant taste bad to deer.

Hate to break it to you but there's no evidence that our animal husbandry is causing that, or even any evidence that we're causing it in the first place.

Have you seen any studies that competently measure literal heat emission indirectly produced by humans, such as from joule heating, AC exhaust, and more? Common sense alone is enough to let you know that also has a positive correlation. Literally nobody can logically assert that specific chemical emissions are THE cause of climate change. To do so is a textbook case of inductive fallacy.
