Eggs aren't veggies. The dish is called khachapuri and its just a boat of bread filled with cheese and baked. Then you put an egg yolk and butter on it as it comes out of the oven. So yes you can serve it without the egg.

Gouda works well as far as euro cheeses go, never eaten american cheese so go off on the flavour profile of that. Kaşar/kashkaval is a medium aged relatively soft melty cheese with no moldy rind. Anything that can be grated nicely and melts, I hear pepperjack is as such?
