I think it's for cleansing the palate between different sushi types so you can clearly taste the difference between, say, salmon nigiri, tuna belly maki and mackerel oshizushi.
Excepting oshizushi, I don't even really like sushi.

As much as I want to love Japanese food, I can't. Outside of Ramen and Okonomiyaki most of the food has the same flavor. It's not bad by no means but it isn't isn't on my bucket list when I think of foods to try out. Why is Japanese food taste the same?

I make sushi at a chain store. I legit hate anyone that asks for extra ginger. I know those fucking animals are eating it like it's candy with every bite. That and spicy mayo are the trash taste filters.
