supermarket ""butchers"" never receive the best cuts because those go straight to restaurants instead.
local butchers nearly always have a secret menu that you can access just by simply being a loyal, friendly customer and buttering them up well
they also do shit like let you make a tab so you can purchase shit at bulk prices
