supermarket ""butchers"" never receive the best cuts because those go straight to restaurants instead.
local butchers nearly always have a secret menu that you can access just by simply being a loyal, friendly customer and buttering them up well

Emu is more novelty than roo which is the only native meat you'll find in the supermarket here and pretty sparingly at that compared to beef etc. That might change though as beef and lamb prices are climbing.
