What are some simple but somewhat unintuitive things you guys like to do for breakfast?
If I don't want to go crazy with a bunch of different ingredients sometimes I'll just whip up some scrambled eggs but put them in a well-oiled tortilla.
I also recently mixed hot sauce and cumin in with cracked eggs prior to cooking them. The former was interesting but I would generally not recommend the latter.

I have what you call burritos for breakfast at least 5 times a week. I rarely use beans because I'm too lazy to make them and don't really like packed/canned and I never use rice at all. Quesdadillas are also really easy, you can put bacon, ham or other deli meat inside.
Can't remember the last time I had a different breakfast but I live in north Mexico

If you have leftover roasted butternut squash (big if), make breakfast burritos with that as the filling. Mash the squash, season with salt, pepper, cumin, cayenne. Grate cheese into squash. Fill tortilla with mixture, optionally adding other breakfast burrito ingredients (eggs, sausage, onions, peppers, etc), but it's great on its own. Roll burrito and toast in a skillet. Also works well as a quesadilla filling if you prefer a flat burrito. Not something I go out of the way to prepare, but the day after having butternut squash with dinner I always make this for breakfast.

Much thicker than chicken eggs but beats into a wonderful consistency, and 1 duck egg is equal to about 2 chicken eggs in size.
