What's the secret to making those mythical no-knead dutch oven breads?
Every Youtuber says they're so easy to make and you get better stuff than anything you can buy at a store, but last time I made it dough felt too wet and undercooked and the flavor was a bit too yeasty

Don't leave it for too long and learn to cook it longer if it needs to

also your dutch oven might be smaller than the dutch oven your recipe is using

Makes sense about the yeastiness. I just left it in the oven for 24 hours. It's wet as in undercooked. It feels more like a heavy bread pudding than a proper fluffy bread.

Dude it's fucking awful. Last time I tried to make brioche the dough fucking adhered to my hand and I couldn't get it off. Every moment of it was unpleasant for me, and the bread didn't come out breadish at all.
Credible-sounding people on /ck/ say they don't even use their standmixers to knead dough for bread, but otherwise seems impossible.
Maybe though I'm just a retard making assumptions only after 1 botched attempt

I usually make it in the late afternoon or early evening then bake it the next morning.

Farmhouse Loaf (John Kirkwood’s)
600g Bread Flour
440g water
2tsp yeast
8g salt
20g oil
Sunflower seeds

Activate yeast
Combine dry ingredients
Mix in wet ingredients til combined
Rise for 45 min
Knock back on wet countertop
Rise for 30 min
Knock back on wet countertop
Form dough into ball
Rise for 30 min
Preheat oven to 400F
Cook 30-35 min

I used cornmeal and a bit of flour on the bottom and no parchment and it worked fine

Dutch ovens are piss easy to clean generally.

Try leaving just the flour/water dough in the fridge overnight. Then add the yeast and salt in afterwards and wait again, since they inhibit autolysis.

Also, a lot of people make the big mistake of not pre-heating the shit out of their dutch oven. Leave it in the oven for like 30-60 minutes on the highest setting. If you have a infrared thermometer, make sure your dutch oven actually reads the temperature you have your oven set to.

Yep. I didn't fold at all. I wanted the lazy recipe to work. Maybe on the yeast, though I did heat up the dutch oven together with my oven and it took about 20 mins.
Biggest mistake was that I messed up the stage where you form it into a ball and let it rest for a bit more.
