How the fuck do I use this shit to fry an egg? I did the mercury water ball test successfully, got rid of the water and poured in my avocado oil (which is supposed to have hight smoke point). Shit started bubbling and smoking immediately, probably giving me cancer. If I get it to a heat where the oil doesn't smoke, the mercury water ball test fails meaning the heat is not enough and shit will stick like superglue. Do I give up and just get carbon steel? Eggs are the main dish I'm having issues with.

Are you insane? Why are you using such a high heat? Turn the element/burner to medium-low and preheat for 2-3 minutes, then add butter/oil. It might take a few attempts to dial it in if you're a homecook, but eventually you'll know what's too cold/too hot as you get more experience. Better to have it be a bit too cold than scorching hot.

You need to learn how to use stainless, you want to use medium-ish heats and food will stick initially, but the secret is to leave the food alone until it gets to a certain point where it's cooked enough and naturally releases from the pan.

If you know how to control heat it doesn't matter, eggs won't stick to stainless either. Nothing really wrong with Teflon if you can't (or have a shit electric where heat control is hopeless), but otherwise the main advantage is just saving time heating the pan.

There is no advantage. No one who isn't a shill will say SS or CI is easier to cook eggs with. There's a reason they cook eggs in restaurants with nonstick. (BTW there are nonstick pans being used to cook eggs that have literally no teflon left and it's just bare metal, so maybe teflon isn't as important to line cooks after all.) The eggs I cooked ITT have only about a tsp maybe 1.5 tsp of butter to coat the pan in butter, just enough to coat the bottom of the pan. And you don't need to season stainless steel. I own a nonstick, but I usually just reach for the SS because teflon contamination does worry me.

Turn on the stove, put my cast on, throw some mustard seeds on to soak oil from yesterday, take them off and put them on whatever canned fish I'll be having, olive oil wait a bit then add in my meat, pepper and msg/I+G, take it out or leave it haha and do the eggs, garlic and herbs, plate it, scrape off any loose bits and turn off burner. Your heat is way too high.
Stop it. You are probably doing it intentionally. There is no reason to have the heat that high for cooking a egg.

If you are just retarded then add your oil of choice first and start the heat. As the pan heats up enough that the oil starts to sizzle a bit (especially if you add a drop of water) then it's the right heat and you add your egg for a quick fry.

Do not heat your pan until it's fucking red hot then throw oil at it or whatever dumb shit you did.

i cook almost exclusively on stainless.

butter, melt at medium until the butter begins to slowly darken and bubble uniformly. coat the pan with it, then crack the egg in. the egg will then lift off perfectly.
