After the first test piece, i rewet and breaded the rest of the pieces

Final Result.
Used flour, salt/pepper, greek seasoning, and paprika.
For the first time i think it came out ok. Next time ill use pickle juice to marinate the chicken beforehand.

Try buttermilk instead of the pickle juice. You can add all your spices to the milk while it marinates, then use it instead of eggs for flour and dredging
