how tf I cook eggs in my iron skillet??

I swear everything I read online is fake BS, or is using motor oil or something. It doesn't matter how much I season my pan or if I use 10 lbs of butter. It turns out to be a big mess and I might as well bust out the power tools to clean that shit up, and then throw it in the trash because it still likely will not be clean.

help plz

lower the heat. My shitty electric stove goes 1-9. I cook most meats on 5. Then lower the heat to 3 and remove the pan for 30 seconds. Add the eggs and they cook fine. I have lodge cast iron with shit tier seasoning I take horrible care of and it still works

this? (pic related)
That looks like what I used to wash as a dishwasher in a retirement community of 200+ people. Honestly, I'd rather wash that pan than an iron pan when it comes to eggs. I'm not sure if this is a thing but I've seen eggs stuck to that as well. It wasn't nearly the same nightmare but it still sucked. But we used steel wool type shit to wash everything, so maybe that had something to do with it (ie made scratches in the metal for the eggs to stick to).

If lowering the heat doesn't work for you, try a different cooking oil. I switched to sunflower oil from olive on a whim, and for some reason that' that made the meme real for me.

I'm not sure why no one else has said this. Lard was historically used to season cast iron cookware.

>> No.17738169

No dude you're doing it all wrong. You the pan from your pic, I have those as well. Then you season them once, just with oil and high heat. In the beginning it will stick but after some time the whole pan will turn black and it's perfect. Just never ever wash it with soap or scratch pads. Just use hot water and a brush or a piece of paper towel.

>> No.17738787

>>17737626
Pour in a little oil, spread it around the inside of the pan with a paper towel and heat the pan right up the smoking point of the oil (plain canola for instance) and keep it there for a minute or two, then make some thin French crepe style pancakes in the pan. The first one may still stick a little, the next ones ought to come out fine.

That is the method I use to touch up the non-stick seasoning on my carbon steel and cast iron pans. No hour long, roasting your bare pan in the oven sessions required.

Looks like carbon steel. Season it and eggs are easy just add oil and swirl to coat. Also wait before the white has set before moving. I like to start at medium high and turn down when the bottom is solid

Most of those reviews are BS because there's Chinese ones (shit) and French ones (good); however, two French ones will basically be the same, two Chinese ones will basically be the same. There's nothing to review except for price and handle ergonomics.

For what it's worth, Matfer Bourgeat are fairly inexpensive and I've never had any problems with mine.

just use a teflon pan for eggs. its not going to fucking kill you for this one thing that cast iron is terrible for. its not hard to keep teflon good when you use proper utensils for it and clean it with the soft side of a sponge, and especially if you're only using it for a small fraction of your food
