So good, but I try not to have them too often. Here in the UK we have scratchings, crackling and puffs each with a different fat content. I prefer homemade though.

You cook the pork until almost done and cut off the skin leaving as much fat as possible on the meat. Scrape fat off the skin with a spoon (it'll be super soft at this point). Drape the skin over a rack and put back in the oven at a low temp to render any remaining fat. You end up with a brittle sheet of crunchy savouriness that tastes even porkier than the actual meat. Pro tip: dip it into organic cyder vinegar.

Nacho cheese pork rinds are outstanding if you can find them. Kroger has some in a green bag but the flavor is just labeled “queso”. I put them in ramen sometimes
