Mayo is literally just thickened oil. Fries are already so greasy, why would anyone want an oily condiment for them? Ketchup makes sense, because it's tangy and sweet. But hot sauce on French fries is truly the best option. I just dump it all over the fries. It's how I grew up eating it, just chips or fries smothered in Louisiana or red hot brings me right back to childhood

Fries shouldn't be that greasy unless the oil was too cold. But you still get some potato in the center that the oil doesn't reach with thicker fries which is when they're good with mayo. It's not as good with thinner fries.

Mild yellow mustard is good on greasy fries too since it's vinegary with some flavor. If you like hot sauce then you might like that on it too.
