Texas fag here from Houston/San Antonio area. I make my moms chili recipe which is her mothers recipe which is her mothers recipe. Chili is a "what's in the cupboard dish like Gumbo. Cocoa and peppers of your choice are required. Beans optional. As long as your chili is thick like a stew you're good. Lot of fuckos serving chili watery like a soup.

Chili wasn't from Mexico if that's what you're referring to. That's a common misconception. Chili as near as anyone can tell is legitimately a Texas original dish. Mexicans historically denied having anything to do with it. They're pretty clear on what their own dishes are and chili con carne wasn't one of them.

My argument against beans is pretty simple. They detract from the point of chili.
It's similar to the autistic list of rules Jiro had for eating at his restaurant where you aren't supposed to dunk it in soy sauce and you gotta eat it right away so the temperature and consistency is optimal.
Or I guess kind of like how people get offended if you add salt to a dish they made.
Getting the meat and peppers in peak condition for an intense chili flavor is the point of an honest chili con carne bowl, and beans or other fillers are more if you don't care about cooking and just want some slapped together snack.
