What's a cooking device that fundamentally "upgraded" your cooking ability.

After buying a mandoline, I have found my salads, pickles, sandwich/burger toppings, entrée garnishes, and so on to be dramatically improved in both quality and speed of preparation, to the point where I now have significantly more variety in all of the above in my regular cooking rotation because of how easy and consistent it has made it. You can thin slice virtually anything into being delicious raw or pickled.

It means that I sharpen my knives once every few days instead of once every few months because I keep putting it off. If you're a serial procrastinator like me this means that you'll spend a much greater % of your prep time with sharp knives. Maybe you're not a procrastinator like me, and if so more power to you for being able to get a superior grind on your knives by putting in the time and effort. All the meat you have the option of buying is packaged in plastic at the slaughterhouse, the only plastic-free option is going vegan and wearing cotton gloves all day long. I got some silicone bags for higher temperature stuff because it does concern me a bit. You could use it for everything. Food grade silicone is free of most of the additives polypropylene/polyethylene have.

Professional Victorinox chef's knife. Laugh all you want it's not only "a really good knife" it drastically illuminated how poorly standard kitchen knives are made. It's a simple amalgamation of plastic and stainless, not pretty at all, fairly cheap compared to Japanese etc. knives, but it has exactly the right bolster shape, handle size, blade angle, edge curve, etc. etc. etc. I know this isn't what OP was asking for, but for me it turned cooking from a chore into a hobby.

Runner up: silicone funnels. No shit, get a cheap set off Ebay. They're completely different in that they seal to the throat of the vessel they're inserted into. You can overpour an entire volume into it and let the bubbles, foam, air, whatever sort itself out without any spillage.

This is something I've never understood. I stone my knives about once every couple months or even yearly, and steel them once a week before use when they need it. There's a lot to be discovered by looking into the stability of plastics in both high heat and acidic environments vs. the "food storage" environment. The safety standards are really slow to catch up to what is actually known. I know a few people in plastics and resin technologies and they all specifically avoid having their hot acidic foods in any form of polymers.
