Slice off the top of the whole bulb, drizzle in olive oil, pinch of salt and pepper and wrap in tinfoil. Roast until it's caramelized. The individual cloves will now spread like butter and having been roasted all the harsh notes are replaced with sweetness. Spread on toast and it's fucking delicious.
