I was raised in the greater Kansas City area and have always enjoyed KC BBQ due to the sauces used.
>Carolina sauce uses too much vinegar that overpowers the flavor of the meat
>Texas sauce doesn't exist as they don't use any
>Memphis dry rub is my second favorite
>Alabama's mayo-based sauce and it was not bad but would rather have KC or Memphis if given the choice
For me, BBQ means sauce or some sort of rub to flavor the meat.

Memphis. Greek spices infused with Southern/Creole shit. Dry rub. Meats always cooked perfect, not drowning in a sweet ketchup. I understand every subset of BBQ does it, but Memphis pork/chicken done well is top tier.

You hit 2/3 GOAT states though. I'll give you TN and KY as runners up, but TN really only has Memphis and I don't really care for black people barbecue. If anyone says GA or MZ I'm leaving. Both are too sweet and absolutely abysmal. Still a step above anything a Yankee can conjure up though.

Hemingway South Carolina. Scotts BBQ has the best ribs I've ever tasted in my life. Smokeys, now closed, in Raleigh NC was just some all around good bbq. And Danny's in Raleigh had these killer molasses baked beans.

when nigs make good bbq it's not just good, it's something else. i honestly don't hear much of or about alabama bbq outside of you bamabois on here talking about it from time to time.
you mention Memphis separate from the rest of Tennessee but i have to ask, does all of Alabama usually adhere to the white bbq sauce and pork priority i'm reading about here?

>does all of Alabama usually adhere to the white bbq sauce and pork priority i'm reading about here?
No. Some parts do a gay tomato sauce like GA. Also, Memphis is literally the only part of TN with a barbecue culture. I've lived my whole life in GA, AL, and TN and have driven around the rest of the South extensively. I agree that nigs can make a mean cue, but they often (as in soul food) put way too much sugar. I judge this on a case by case basis and the only good barbecue in my current city is made by church blacks.
