Bitterness becomes enjoyable when your balls drop and your palate isn't hypersensitive to bitter compounds anymore. This sensitivity evolved to protect children from sticking toxic plants into their mouth at that age when they're picking things up off the ground and eating them, but like breastfeeding it eventually becomes unneeded.

Tonic water is really only mildly bitter and there's a pleasant herbal complexity in it as well.
